Pound cake recipe
or is it a Madeira cake?

Pound Cake refers to the type of cake traditionally made with a pound of each of four ingredients: Flour, Butter, Eggs, and Sugar - Wikipedia!

I've always wondered about Pound Cake. What is the big hype about it. Is it really that amazing? So, I looked it up and when I saw Wiki's definition I realized that it is basically the same as Madeira Cake, or rather say almost the same. 

Let's see and get baking! I used Martha Stewart"s Recipe, only difference. I add baking powder and cheese cake flavor. Why, because I love to experiment!

Pound cake recipe


  • (1 x Cup) Butter (room temperature)
  • (2 x Cups) Flour 
  • (1 x Cup) Castor Sugar
  • 4 Large Eggs
  • Half T/Spoon Salt
  • Half T/Spoon Baking Powder
  • Flavoring: I chose something crazy: Cheese cake


  • Preheat oven to 180 degrees Celsius.
  • Choose the pan you want. I've seen people use ring pans, bread pans. Depends what you want to do with the cake I quess. I'm going to use a bread pan today. 
  • I never use butter in my pans. I just spray them with edible spray and outline the pan with baking paper.
  • Beat the butter and sugar until light and fluffy with mixer.
  • Add eggs, one at a time, beating well in between. 
  • Add your chosen flavor as well as the salt.
  • Now you need to add the flour, little bits at a time until it is combined. Do not over mix it. 
  • Bake until cake pick comes out clean.

You will note that I do not say how long it should bake. It is because we all have different ovens. And even brand new ovens behave differently. My oven is really a fabulous oven, but even I still use an oven thermometer to  make sure the temperature is right. I also set a timer to check on the cake at intervals of 20 minutes, then 5 minutes thereafter. Reason for that is because you might separate your mix into two pans which means it will get baked quicker.

I always say: "If you smell the cake, it is probably almost done" That is the time when you can open the oven and test if it is baked. Once done, put on cooling racks to complete completely.

The verdict: It is definitely not a cake that you will use for Birthday Parties. Perfect for Tea-time. I honestly think it will be great with a dash of whipped cream and fruit. No wonder it is baked in a bread pan or ring pan!
