- This is real chocolate, meaning it requires tempering when used for dipping, molding, and chocolate bark
- Storage & Shelf Life: Always store chocolate in a dry, dark place at a temperature of 53.6F to 60.8F.
- Also avoid temperature shocks of more than 50F: your chocolate might develop a white sheen. This does not affect the taste, but admit it: a dark, shiny and good looking praline or chocolate bar looks far more tempting.

We repackage our Merckens candy coatings and chocolate in 1, 2, 5 and 10 lb, and we take the absolute best care to ensure cross-contamination does not occur, but because we are not a dedicated nut free facility we cannot state that our 1, 2, 5, and 10 pound bags of Merckens are nut free.
